Vainilla (Vanilla planifolia) — Mexico is the birthplace of vanilla, native to the Totonac region of Veracruz (particularly Papantla), which remains the country's principal growing area alongside parts of Oaxaca and Puebla. Mexican vanilla is prized worldwide for its rich, smooth, and slightly woody-sweet flavor profile, considered more complex than vanilla grown in other regions like Madagascar.
Cultivation & Curing — Export-grade vanilla beans are hand-pollinated (since the vanilla orchid's natural pollinator, the Melipona bee, is now rare) and hand-harvested at peak maturity. The pods then undergo a traditional curing process — wilting, sweating, drying, and conditioning — that can take three to six months and develops the beans' signature aroma and dark, supple texture.
Export Grades — Mexican vanilla beans for export are typically classified as:
Gourmet/Grade A — Long, plump, oily, dark brown-to-black pods with high moisture content (25–35%), ideal for extract-making and premium culinary use.
Grade B (Extract grade) — Slightly drier, thinner pods with lower moisture, primarily used for commercial extract production rather than whole-bean sale.
Certifications — Export-quality vanilla is often certified organic and Fair Trade, with growers following food safety and traceability standards (such as USDA Organic and SENASICA phytosanitary certification) for shipment to the U.S., Europe, and other international markets.
